1.By adding a product-related keyword and/or its variations
to a piece of content (for e-commerce, it's mainly a product
description section) will help Google identify a topic relevancy
of this page. This is the main benefit.

FOR EXAMPLE: let's say a store is selling a product:
"portable vacuum cleaner for a vehicle".

However, the 'Vacuum Cleaner' page is missing such important
keywords and variations as:

- portable
- car
- vehicle

What will happen?

Google may think a topic of this page is about any vacuum cleaner.
Since "vacuum cleaner" is a generic topic, it makes hard to rank
the product page for:

- portable vacuum cleaner
- car vacuum cleaner

And the reason why?

It's because there's no relevancy between the product and
the actual content/description.

2. Regarding your second question...

It's all about intent that is the searcher's purpose for the search
(informational, navigational, transactional, and commercial)

Transactional and commercial intent makes a keyword good for converting.

Transactional will usually help convince a searcher to buy
a product in the sales funnel.

Example of translactional keywords:

product + review ...
product #1 vs product #2 ...
5 best features ...
10 top products ...

Users with commercial intent are most likely to commit to buy.

Good example of commercial queries:

buy + product
free shipping
discount
coupon
deals
