Except for copy.com or Dropbox, because of the large size of the files it would be hard to mirror them. Does anyone have a zip program that would split the zip file into parts?

Do you mean AFTER they are zipped? == hjsplit
Magic Button :
http://www.hjsplit.org/

WinRAR (and I think 7zip and WinZIP) can definitely make the piece split as it makes the archive from data (or the rar files themselves == rar inside a rar).
