You can try IDM "Internet Download Manager". After the install, you can go to YouTube and a little blue box will appear above the videos, you choose the one you want to download (360px, 720px...)
I can give you a link, but I think it's in french, so you can try to find it by yourself. |

I also use Download Helper. It is a plugin to your web browser and when it detects videos you can click on it to save to your hard drive.

If anyone has a trick for snagging Hulu style vids, i'm all ears. Only option that I know of now is to Camtasia screengrab the feed but I would like to snag the source.
