Contact Form 7 is supposed to work since version 3.5.5 and GravityForms since version 3.6 ;)
Both elements are not available on a website I installed this plugin.

These are not included in Visual Composer (and have never been). Consider downloading Contact Form from here :
http://wordpress.org/plugins/contact-form-7/ (its free), GravityForms is not free, maybe it's available somewhere here on the forum...
I know that we've to install those plugins too in order to use them in VC.
CF 7 and GF are installed and working but not showing as element in Visual Composer.
All elements are present in your installation of VC?

I personnally don't use CF 5 and GF and tough can't help you with it. Sorry...
