They can only see trades you ping to their servers. Your trading platform and it's contents sits on your hard drive. They would need to hack you to see what you got there.

PS: A piece of advice. Do not go live. I've been on demo for the past 3 years because I cannot be consistent enough to be a winning trader. It's just an hobby now. If you try this, do it for 6 months at least consistently on demo. Then go live.
