You can cancel the order in your Amazon Seller Account and choose a reason - no inventory.

I haven't read this, but a few years back was selling used books on Amazon and used a couple of dealers to dropship for me. Often a book I sold would have already sold with a dealer so wasn't available. No big deal to cancel an order with Amazon.

Doing basically nothing? Well, posting hundreds of items and keeping track on x orders a day is not really doing nothing .... also it is not that easy to dropship with amazon. it is true that you can easily cancel an order with a mouse click, however, if this happens several times it has a deep impact on your seller metrics .....
