If anyone gets this. Can they tell me, how do they decide which headline to use for SEO once the article goes live?
Or do all 3 go live, get pinged and once a leader is chosen, the other 2 get taken down?

I did it doesn't. I actually posted out a more fleshed out question on their blog.
The basis of this plugin is laughable. As from my point of view, it solely works on internal traffic to your blog. That is, traffic that already has come from a link, be it social or seo.
So with internal traffic, you get to see which headline works best as each unique visitor will see a different headline and then proceed to share that.
From the perspective of writing up articles and then sharing them with SEO/Social. This plugin is useless for the very reasons highlighted in the video in the blog. Kind of ironic.
