Just a few things that I found that I prefer to be removed (nothing major)
admin/static/dashboard.js - Line 397 "Loads news feed from the developer site"
admin/system/footer.php - Line 4 - 6 "Links to documentation and checks for updates"
includes/Admin.class.php - Lines 3648 - 3654 "Update stuff with author links"
That's about it. Lots of links and copyright stuff... just don't click them or hunt them down and change them. ;)

As I stated, nothing major. However, I personally don't like them. Here is why:
Usually update checks ping the developers server and could leave a trail back to your website if you use it on a live website, given if the developer keeps track of analytics and retains logs. Same goes for links to the developers websites, they will show up as backlinks eventually and/or if someone clicks it then your website will be linked.
- It's a risk that I would rather avoid in the first place.
