@rhqman: Thank you for the mediafire mirror. Max reps to you, too! I just can't get past the marketer's surname ... it reminds me of the spicy, gelatinous delicacy I remember from my Louisiana youth known as "hogs head cheese" or "head cheese." My mother used to crave it (with saltine crackers) when she was pregnant with my younger sister. Boy was that stuff hot! You could see all the little flecks of spices through the reddish-brown gelatin mold. It originated in Europe (probably the Middle Ages) and yes, it was made from the boiled head of hogs. With Louisiana's French and Spanish influence, it was probably brought there by either French, Spanish or Irish settlers.
So, that's my little contribution to your culinary history lesson for the day.   Layna61524 |
