Or dictation + outline. You can speak words a lot faster than you can write them. Maybe get PLR, then dictate it, going through and paraphrasing everything, adding in your own thoughts and stories as you go. But if you know the topic already, just jot down a quick outline of what you want to cover, turn on dragon, or a voice recording app and start talking. You could also use public domain, in lieu of PLR for changing all the words, but not the content.

Technically you could do this with any non-fiction book out there. Facts are public domain. News stories are public domain, as well. You could very quickly write a true crime book by reading a bunch of news stories about gruesome crimes and just retelling them to yourself in your own words. So there are lots of ways to get lots of words down quickly.
