I noticed a complaint about the "lack of recipes". This isn't exactly a cookbook, but it does cover a wide range of fermentation recipes. I found a couple recipes in this book that I had great trouble finding online, like clear instructions for coconut milk kefir and the Tibetan fermented beverage, Jun. The recipes are each explained is excellent detail, and the reasons that humanity uses the recipes are also explained. This book is more than just a "how-to" book, it explains WHY humans ferment food and some of the best, easiest ways to do it. I've found that once I understood why and how fermentation works, I could start venturing out into my own fermented creations. This is a "teach you to fish" sort of book, rather than just a cookbook with a few, static recipes.
