Servings: 4 INGREDIENTS o 3 teaspoons olive oil o 1 red capsicum, deseeded, well sliced o 2 garlic cloves, well crushed o 1 red onion, well sliced o 1 yellow capsicum, deseeded, well sliced o 2 tablespoons chopped fresh continental parsley o 4 medium wholegrain wraps, warmed o 8 portobello mushrooms o 50g feta, crumbled o ½ avocado, mashed o 80g baby spinach How to prepare: Step 1 Preheat the grill to a high position. Line a baking sheet with foil. Place the mushrooms on the prepared tray with the cut side up. Put 2 teaspoons of olive oil and half of garlic in a small bowl. Step 2 Brush the garlic mixture onto the mushroom cup to coat. Grill, rotating for 6-8 minutes halfway through cooking, until the mushrooms are golden and soft. Step 3 Afterwards, heat the remaining 1 teaspoon of oil in a large nonstick pan over medium heat. Add onions and cook, stirring for 5 minutes or until tender. Add the capsicum and remaining garlic, boil, and stir for 5 minutes or until it starts to caramelize. Stir in the parsley. Step 4 Cut the grilled mushrooms in half. Put spinach, capsicum mixture and roasted mushrooms on top of each wrap, add a ball of mashed avocado. Sprinkle with feta. Just fold it up and serve.
